Where does our food come from?
We value sourcing locally and working with our Black Forest partners. Beef from the Färber butcher shop in Emmendingen, asparagus from Opfingen by Heinz Scherb, lamb’s lettuce and potatoes from Stefan Wagner in the Griestal, and much more.
Complemented by truffles from Alba, oysters from Brittany, porcini mushrooms from Piedmont, and exquisite fine wines from around the world, our long-standing network of suppliers—combined with the precision of artisanal culinary artistry—enables us to create precisely the culinary experience for which the Hirschen has become renowned.
